I love the smell of scrambled eggs in the morning ...
A while ago I realised that my scrambled eggs are ok but not up to my standards.
I googled a few youtube videos and the first video I came across was Gordon Ramsey’s Scrambled Eggs. After watching Gordon’s video, I knew what I did wrong. The secret as in so many time is patience (less heat more steering).
I didn’t want to copy Chef Ramsey’s receipt.
I checked for possible ingredients and this is what I came up with.
- 4 eggs
- 1 teaspoon of duck fat
- 1 spring onion
- Mature Cheddar
- Smoked Pancetta (you can also use chorizo)
- A pinch salt
- Black Pepper
- 1 Baguette
Chopp up one spring onion into fine cubes. Grate some cheddar and whisk the cheese, onion and eggs up in a bowl and add one pinch of salt. Just a pinch of salt as the cheddar and the smoked pancetta will give some saltiness to the lot.
Diced up the pancetta into not too big pieces and put it with the duck fat in a small frying pan on medium heat to release the flavours into the fat and crunch up the pancetta a bit.
A soon that pancetta takes on a bit of brown put the cooker on low heat. Take the pan off the heat and pour in the egg. Straight away start steering content in the pan. As soon the egg stops setting put the pan back on low heat low and cook while steering till you get beautiful creamy slightly chunky scrambled eggs.
Sever on small slices of baguette on a big plate to share and sprinkle some black pepper and garnish with some chopped chives.
